Mushroom & Pea Risotto

Only a few months ago, I was a complete risotto virgin. Now, I've made it about a half dozen times, and I'm starting to notice a little pattern. Start with finely chopped onions or shallots, saute in butter and oil until very soft. Add short grained rice making sure to get the rice nice and hot and fully coated with the oil. Then, add flavor with dry white wine, letting it simmer until it evaporates. Next, add warmed broth a cup and a half at a time, letting the broth be fully absorbed before you add the next cup, until all of the broth is gone. Turn off the heat, stir in Parmesan cheese. That's the backbone of risotto as far as I can tell.

Today, mid-grocery shopping, I decided that I'd try a mushroom and pea risotto, so I brought home three portobello mushroom caps and a bag of frozen peas. I googled a recipe and found this, which led me to this, both of which gave me the clues I needed to make a risotto with ingredients I'd never used before. First, add the mushrooms early on - after heating up the rice, and before adding the first cup of broth. Second clue: cook the peas separately using part of the heated broth, and add at the very end, just a few minutes before turning off the heat.

Now, apparently, there is a lot more to risotto than I ever imagined, but for now, my inexperienced efforts have always resulted in the rice being perfectly cooked and the overall flavor being nicely balanced. I've found that adding something green (like parsley or peas) adds a nice visual freshness. And, while I've tried several different store-bought broths, I think my favorite so far is Swanson's Organic Vegetable. Overall, I'm finding that risotto is the perfect comfort food for me: creamy, warm, and I can eat it with a spoon from a bowl. Yum.

Lovely morning

And, I must say that the crisp, cool 50 degree weather on my walk to and from work today was delightful as well.

Stumbled upon a website for The Local - a new restaraunt in Belmont that I walk by on my commute. I'll post a picture soon because I'm as facinated by the space as I am interested in the menu.

Long time gone

Spring tulips have already come and gone.

New (I woulda sworn they already had one?) myspace site for City Salvage Records, a little record label that happens to host several of my favorite musicians, and a link to a nice little blog article on Paul Curreri.

Saturday night dinner at The Local - Downtown Belmont is about to boom, that is, if we can't say that it has already. And, Twisted Branch and late-night C&O, a good thing.

Taking the leap and signing up for Horse and Buggy Produce. I'm inspired by my Seester, who tells me that she is the host pick-up site for her CSA in her neighborhood this season! How cool! I'm a little nervous: will it be too much, or not enough? Will I feel too much pressure to cook and not eat out? Will I miss an awesome share-week because my pick-ups are only biweekly? Oh! So many questions!

Successful lease negotiations: one down, one to go. Fingers still crossed.

Must fix the screen on my front door.

Free weekend

Long morning talks with the brother (we both salivate thinking about supper at the Smith House next weekend!), and with the Pa (and this priceless moment, where after I make an innocent comment, he pauses, and declares the score Love - 40. (Who knew I could be so profound on a Saturday morning?!).

That's what makes you strong

I'm thinking of Jesse Winchester's little tune... "and if you know you're weak, ... it's a funny thing, but that's what makes you strong..."

Continuing on to Week 4 of the body's meltdown. Reinjuring myself last night, although consensus at the Doctor's office this morning was that it might have happened whether or not I did what I did. At least it's manageable pain this time, but it made sleeping uncomfortable last night and it's starting to take an emotional toll more than anything. Attempts by family to help by phone really just made me feel worse. I hate to say that, but it's true. It's time like these when the distance really takes a toll. For many reasons: they can't do anything. I can't ask them to help. The can't rescue me if I were to, say, quit my job with no notice. Yeah. It's that kind of thing. :)

I did, however, manage to call in my pledge to WVTF (my favorite NPR station) this morning and help them finish off their fall fund drive. They're sending me a coffee mug. You think I should have asked for the Rockmonanoff CD instead? Yeah, I think so. ;) And, an early morning run to pick up the Fancy-and-more-expensive-now cat food for the impatient kitties. Oh, and a sleepy stop by Bodo's too.

Saturday

Vivid memories of our home in Italy - plenty-large rooms, all with sliding glass doors, marble floors, persianas, a lemon tree outside my bedroom, splendid views to Mediterranean sunsets every evening. Tried to find a picture on the internet of our view, with no luck, although I wasn't surprised.

Finding body's energy reserves, even after week full of neck pain, and doctor visits, and teaching a class in Lburg this morning. I run errands, bra-less. To gather my courage to do this, you see, I just pretended that I'm a hippy. No one is the wiser, especially in this town, and especially when your errands involve a stop by the music store and Whole Foods!

Mums for the porch and the friend who saved me when I couldn't move on Wednesday. Hers to be delivered tomorrow before our run, or walk, or whatever we can muster.

Two large-venue shows this week (Lucinda, and Bob Dylan with Elvis Costello) re-convinces me that my favorite venue in town is my favorite because it's the size of my living room. Looking forward to hearing new music there tomorrow night.

Little Kitty helps me write my blog tonight.

Falling Slowly

Feeling relatively well now, despite 6 a.m. cold sweats and 8 a.m. debilitating neck pain. Thank goodness for parents and friends who answer the phone at ungodly hours. Lucky me, sincerely. And, healing thoughts to Ma and Pa and Sisters who could use some healing thoughts, too. Wonder if Brother does too...

Saturday

An a.m. Riverwalk run, followed by an impromptu bagel tasting contest. It's a clear winner: sorry City Market place, even your awesome pear & walnut schmear can't stand up to a Bodo's Everything bagel. Also, finally bought local art from (and of) the City Market, which was promptly placed on the wall in the kitchen to begin the collection.

Secret confession: remember earlier in the week when I mentioned that I'd decided it was OK to "not like someone"? Well, akshually... I'd decided it was OK to "hate" someone. I just think that's such a strong word, that I didn't want to tell the whole truth about my decision. But, I had even looked up the word on Merriam-Webster.com and decided that for a few special someones the word seemed to apply, and I promised myself that I would allow myself to use it, if only sparingly. Well, here's the story:

About .2 seconds after hopping on the Interstate today - pop, whizz - a rock hit my windshield and cracked it! My first thought was, damn, if I'd left my house just 2 seconds later, that rock wouldnta hit my windshield (who knew I am such a fatalist!?). The next thing that happened, though, was that I heard these lyrics coming out of my stereo: "Always love. Hate will get you every time. Always love..." Thank you, Nada Surf. In some small way, I think I deserved that crack in the windshield.

Other thoughts of the day:

If money weren't an object I'd: own a VW Westfalia and spend 9 weeks every year tooling around in it; get a massage every week.
